Ron's Lemon Drizzel Cake
Lemon Drizzel Cake
Is there anything more British than listening to your favorite tunes while staring intensely through an oven door window? We think not.
If the weather forecast outside is gloomy, we are upgrading your studio sessions and kitchen counters with a permanent, bright splash of zesty sunshine.
Turn the volume up, preheat your oven, and let’s get this kitchen track spinning!
The Setlist (Ingredients)
For the Main Act (The Sponge):
- 175g self-raising flour (Keep it light, folks!)
- 1 level tsp baking powder (Dial this back to ½ tsp if you are rocking a super buttery spread)
- 175g Flora Buttery (Or your trusty soft butter substitute)
- 175g caster sugar
- 3 medium eggs (Auditioned and ready)
- 2 tbsp semi-skimmed milk (The smooth baseline)
- Finely grated rind of 2 lemons (The real headline act) [1, 2, 3, 4]
For the Acoustic Encore (The Citrus Drizzle):
Soundcheck & Live Performance (Method)
- The Remix: Grab your largest mixing bowl. Sift in that flour and baking powder like you're throwing confetti at a concert. Throw in absolutely everything else from the cake lineup and beat it fiercely with a wooden spoon until it is smooth, glossy, and camera-ready. [1, 2]
- Into the Green Room: Spoon the batter into a greased and base-lined 1kg (2lb) loaf tin. Smooth it out—this is your cake's time to shine. [1]
- On Air: Pop it into a preheated oven at 180°C (160°C Fan / Gas Mark 4). Let it bake for 1 hour. Do not open that door early unless you want your cake to experience a total bass drop. [1, 2]
- The Cool Down: Once a skewer inserted comes out clean, slide it out and turn it onto a wire tray. [1]
- The Heavy Drizzle: While the cake is baking or gently cooling, heat your lemon juice and sugar in a saucepan over a low flame until the sugar dissolves completely. [1]
- The Ultimate Drop: While the cake is still warm, stab it gently all over with a skewer or toothpick (think of it as adding ventilation), and slowly pour that glorious, sweet, tangy liquid gold right over the top. Let it soak all the way to the core. [1, 2]
Slice it up, put your feet up, and enjoy a bop and a bake!
