Step-by-Step Broadcast (Method)

  1. Preheat the Studio: Crank your oven to 190°C / Fan 170°C / Gas 5. Take a 23cm springform cake tin, line it with baking parchment, and spray it with a bit of oil. Treat it with respect; nobody likes a cake stuck in the machinery.
  2. The Sound Check (Apple Prep): Toss your thinly sliced apples into a bowl with the lemon juice and zest. Give them a good stir. They need to be coated so they don't lose their cool while sitting on standby.
  3. Fader 1 (Dry Mix): In a large mixing bowl, whisk together the flour, baking powder, cinnamon, and mixed spice. This is your bassline.
  4. Fader 2 (Wet Mix): In a separate bowl, grab a metal whisk and vigorously blend the eggs, the 100g of demerara sugar, the milk, and the sunflower oil. Whisk like you're trying to hit the commercial break on time.
  5. The Crossfade: Pour the wet mixture directly into the dry ingredients. Stir gently with your whisk just until the lumps vanish. Do not over-mix, or your cake will turn out denser than a text-in request line.
  6. The Feature Segment: Gently fold those lemony apples into the batter until they are fully submerged. Dump the entire mix into your prepared tin.
